
Quinoa and Organic Black Rice Salad with Sea Superfoods
Ingredients

1 cup cold cooked quinoa

1 cup cold cooked organic black rice

2 cups fresh spinach leaves

1 cup cucumber, cubed

1 cup cherry tomatoes, halved

1 large avocado pitted, peeled, and chopped
Salad Dressing

1/4 cup olive oil
-
1 clove minced garlic
-
2 tablespoons lemon juice
-
1 teaspoon pure maple syrup

Salt and Pepper, Season to taste
Method

Make the dressing: In a small bowl, mix together the olive oil, garlic, lemon juice, maple syrup, salt and pepper. Set aside.

In a large bowl, combine quinoa, spinach, cucumber, tomatoes and avocado.

Drizzle salad with dressing and gently stir until salad is coated with the dressing. Season with salt and pepper, to taste.
