Quinoa and Organic Black Rice Salad with Sea Superfoods


  • 1 cup cold cooked quinoa

  • 1 cup cold cooked organic black rice 

  • 2 cups fresh spinach leaves 

  • 1 cup cucumber, cubed

  • 1 cup cherry tomatoes, halved

  • 1 large avocado pitted, peeled, and chopped

Salad Dressing 

  • 1/4 cup olive oil

  •  1 clove minced garlic

  •  2 tablespoons lemon juice  

  •  1 teaspoon pure maple syrup 

  • Salt and Pepper, Season to taste 


  • Make the dressing: In a small bowl, mix together the olive oil, garlic, lemon juice, maple syrup, salt and pepper. Set aside.

  • In a large bowl, combine quinoa, spinach, cucumber, tomatoes and avocado. 

  • Drizzle salad with dressing and gently stir until salad is coated with the dressing. Season with salt and pepper, to taste. 

  • Top it with 'Pimp My Salad' - Sea Superfoods and serve.
